Basic recipe for cup cakes

Preparation:

1. For each cup, calculate 2 T each of flour, sugar and milk, 1 T cooking oil, 1 tsp. baking powder and 1 egg. First mix the dry ingredients, then add liquids and stir. Fill the cups halfway with batter. If you want the cake to puff over the edge, grease the cup well!

2. Put them in the microwave for 90 seconds at 800 watts. Or, put them in the oven for 20 minutes at 180°. Yumm!

Optional additions

Add your favorites: Coca, vanilla sugar, chocolate chips, almond slivers, nuts, oats, dried, candied or fresh fruit pieces, a shot of rum... There’s no limit. And why not also try a savory version! Perhaps add some chives and Crème Fraiche?

Decoration
If your cup cakes pop over the top, powdered sugar, chocolate frosting or sugar glazing go well. Or, get fancier with edible pearls or crumble topping. A little liquid cream or smoothly stirred pudding are also good topping ideas. You’ll discover that it’s a lot easier to try something new and surprising with little cakes.

For vegans
Instead of using an egg in the basic recipe, use a half of a mashed banana. Or, use 1 ½ T ground linseed mixed with 75 ml water.
