Mini pizzas

Ingredients for 4 servings:

 

1 shallot

1 red chilli pepper

1 clove of garlic

2 tbsp olive oil

1 tbsp tomato purée

150 g canned pizza tomatoes

1 tbsp maple syrup

2 tsp dried oregano

20 g yeast

400 g wheat flour

1 tsp salt

150 g mozzarella

1 yellow pepper

150 g Italian salami, cut into thin strips

2 sprigs of basil

3 tbsp olive oil

Sea salt and milled black pepper

 

1.)    Peel/core the shallots, chillies and garlic, finely dice and sweat together in hot olive oil. Add the tomato purée, pizza tomatoes, maple syrup and oregano and allow to simmer a little. Season with salt and pepper. Leave sauce to cool.

2.)    Crumble the yeast into 250 ml of lukewarm water and dissolve by stirring. Add flour and salt and knead to a smooth, supple dough. Form this into a ball, cover and leave to rise in a warm place for approx. 30 min.

3.)    In the meantime, preheat oven to 200°C. Finely dice the mozzarella and halve, deseed and finely dice the pepper.

4.)    Roll out the pizza dough thinly and cut out 12 small circles with a diameter of approx. 5 to 6 cm. Place these on a baking tray that has been covered with baking paper. Spread some of the sauce onto the dough circles and add the mozzarella, diced pepper and salami slices. Bake the mini pizzas in a hot oven for around 12 min.

In the meantime, remove the basil leaves from the stalks and cut into thin strips. Remove the mini pizzas from the oven, drizzle with olive oil, season with salt and pepper, and garnish with the basil strips.
