
Ingredients for 9 cupcakes:
Preparation time: approx. 40 min. / Baking time: approx. 20–25 min.
For the muffins:
2 eggs
100 g butter
150 ml milk
200 g flour
1 tbsp baking powder
2 tbsp cocoa powder
100 g icing sugar
For the icing:
100 g white chocolate
Juice and zest of 1 lime
150 g full-fat cream cheese
50 g crème fraiche
400 g mixed summer berries (e.g. raspberries, blackberries, blueberries, redcurrants, strawberries)
1.) Preheat oven to 180°C. Place paper moulds in a muffin tin.
2.) Beat butter until fluffy; mix in the eggs gradually. Add in milk, the core of a vanilla pod and a pinch of salt. Mix the flour with the baking powder and icing sugar, sieve it over the mixture and mix into a smooth batter.
3.) Fill the paper moulds to 2/3 full with the batter; bake the muffins for 20 to 25 minutes in a hot oven. Then leave to cool.
4.) In the meantime, cut the chocolate into small pieces and melt in a bowl over a hot bain-marie for the icing. Stir the lime juice and zest into the liquid chocolate with the cream cheese and crème fraiche until smooth. Fill the icing into a piping bag and pipe onto the muffins. Place the berries on top and preferably serve fresh.
