Villeroy & Boch Hotel & Restaurant Division: gourmet cutlery

New gourmet cutlery range with unexpected interpretation of design and function

Unexpected, innovative and absolutely stunning: the new gourmet cutlery range which the Villeroy & Boch Hotel & Restaurant Division is presenting for Spring 2009, opens up a whole new dimension in cutlery. Katja Bremkamp, who studied design and trained as a gold and silversmith naturally has a special relationship to metalwork. She has used these skills to create an innovative cutlery design which transfers the hands' sense of touch to the items of cutlery and, in so doing, makes it possible to experience a completely new, sensuous way of eating. The cutlery acts as a direct substitute for the hands. The result is that guests are encouraged to eat slowly and consciously enjoy what they're eating. And they do concentrate on their food in an exceptional way, because these unusual items of cutlery simply have to be used with consideration.

There is a total of 11 different cutlery items to choose from, each one belonging to one of four thematic tool categories. Inspired by the art-deco stylistic elements and displaying a simple, elegant, timeless design, "Classic Tools" offers a classic table-fork with four prongs, a monoblock table-knife and a table spoon.

The "Gourmet Tools" – which can be used multifunctionally both as hors d'oeuvres and dessert items – display such an unusual design that the guest initially has to study it intensively to understand their functionality. It may even be necessary for the staff to give a brief explanation or a little guidance. There is, for example, a fork with only one prong and also its counter-piece, a monoblock pusher, which assumes the function of the knife. The pusher can be used in every situation where a classical knife is not required for cutting, for example, in the case of risotto or cake. In addition there is a shortened spoon whose bowl merges into the handle. Use of these "Gourmet Tools" demands that the guest concentrates in an exceptional way on essential matters, namely on the food itself.

"Coffee Tools" offer the right spoon for every situation, with three different spoons for espresso, coffee and Latte Macchiato, each one designed to match the size of the relevant cup, tumbler or glass.

"Finger Tools" were especially developed for use with finger food and amuse bouches. They comprise an unusual party spoon which almost resembles a small dish, and a small party-picker. In addition, both the coffee and espresso spoons can be used for finger-food, for example with a shot glass for small hors d'oeuvres. The spoon's intentionally small "work surfaces", which only allow very small portions to be taken, ensure that the user enjoys food for a much longer period than usual.

Villeroy & Boch's new "Gourmet Cutlery" is just perfect for innovative restaurants wanting to pursue new paths beyond the realms of the conventional  – not only in the kitchen, but also in their table settings.
