
Ingredients for 4 servings:
12 king prawns
1 small chilli pepper
60 g fresh ginger
2–3 sprigs of coriander
3 tbsp soy sauce
1 tbsp honey
2 tbsp sesame oil
4 tbsp olive oil
Juice of 1 lemon
1.) Peel the king prawns and remove the gut. Wash the peeled prawns, pat dry and attach lengthways to wooden skewers.
2.) Halve the chilli lengthways, deseed and slice as thinly as possible. Peel the ginger and dice as finely as possible. Wash the coriander, shake dry, remove the leaves from the stalks and chop finely.
3.) Whisk everything together with the soy sauce, honey, both types of oil and the lemon juice. Season the marinade with salt and pepper and pour over the prawns. Marinate for approx. 2 to 3 hours.
Allow the skewers to dry a little and grill on both sides over a hot barbecue. Serve drizzled with the rest of the marinade.
