
Ingredients for 4 servings:
1 cucumber
20 g fresh ginger
1/2 red chilli pepper
200 g prawns, peeled
75 g mayonnaise
1 tsp curry powder
2 tbsp crème fraiche
Salt, cayenne pepper
Juice of 1/2 a lime
If desired, cress to garnish
Fine strips of spring onions
1.) Peel the cucumber and cut into 2.5 cm long pieces. Hollow out the cucumber pieces to halfway and place in salted, boiling water for around 30 seconds. Then refresh in ice water.
2.) Peel and finely grate the ginger. Chop the chilli as finely as possible. Mix the prawns with the mayonnaise, grated ginger, curry powder, finely chopped chilli and crème fraiche and season with salt, cayenne pepper and lime juice to taste.
Fill the hollowed-out cucumber with the prawn salad and garnish with cress and strips of spring onion if desired.
